Dinner Ideas for the week of 3/22



Spring is here! I am so thankful for the warmer weather, and thought I would share what I plan to cook for dinner this week!


Monday

Baked Whole Chicken

Roasted Potato and Carrots


I plan to use this recipe to cook my whole chicken. For the roasted potatoes and carrots, chop them up, coat them in olive oil, salt, pepper, garlic, and roast at 400 degrees for 30-45 minutes until tender.


Tuesday

Beef and Carne Asada tacos with Flour tortillas

The kids love taco night, so we will keep with that tradition. My son and daughter love to make their own pico de gallo together, and I enjoy seeing their teamwork.


Wednesday

Turkey Meatballs

String Beans


I make my turkey meatballs with ground turkey, bread crumbs, bbq sauce, grape jelly, garlic, and Lawry’s season salt. I bake on 375 degrees for about 45 minutes, but time will vary based on the size of your meatballs.


Thursday

Steak

Grilled asparagus


Friday

Takeout Pizza

Homemade Lemon Pepper Wings


My daughter loves cooking, and she actually makes the best lemon pepper wings. She uses melted butter, lemon pepper, and garlic and coats the wings and places in the air fryer. She fries the wings for 12 minutes, then flips them and fries them for another 12 minutes.


I was not a fan of the air fryer, but my kids have learned to use it to cook meals in it, and they are very easy to use! Here are some air fryer options:
