Happy International Women's Day! What’s for dinner this week? Here is what I plan on serving:
Monday
Baked turkey wings, smashed red potatoes, and cabbage. I like turkey wing portions only. I coat them in olive and season them with Lawry's season salt, garlic, parsley, black. I chop onions and peppers and pour a little chicken broth in the pan. I bake on 350 for 1.5-2 hours because I like them tender. the last 15 minutes I will remove the cover to allow them to brown.
Tuesday
Taco bowl
My kids love taco Tuesday! We will do a Chipotle style bowl with different meats and toppings with white rice as the base. Here is what I plan on giving as options:
Trader Joe’s Carne Asada, ground beef, rice, guacamole, tomatoes, black beans, Pico de Gallo
Wednesday
Carolina BBQ Wingettes, okra and tomatoes, rice
I love to get the wingettes from Costco and use my favorite Trader Joes's BBQ sauce actually yellow since it is mustard based. I also love Okra due to my Gullah-geechee roots. I typically cook 3 pieces of chopped bacon, add grape tomatoes, chopped frozen/fresh okra and salt, pepper, and garlic to taste.
Thursday
Shrimp Alfredo
I will make a non-dairy Alfredo using nutritional yeast as a Parmesan substitute and Silk's non dairy whipping cream for milk whipping cream, vegan butter, garlic, and parsley.
Friday
Indian takeout from the best Indian in Maryland (RoyalTajMD.com). My favorite Indian dish is Chicken Tikka Masala and Crab Malabar
Saturday
Homemade Birria Tacos
My daughter learned to make Birria Tacos, and they were so yummy! Check out the last time she made it!
